"Homemade Pumpkin Cookies with Caramel Frosting"

 Hi everyone! Welcome to the "Vasilikibakes" series! Today I'm going to be showing you, how to make Pumpkin Cookies. It's Halloween, so it's a great recipe for this season.

Ingredients:

  • 1 cup of softened butter
  • 1/2 cup of brown sugar
  • 1/2 cup of white sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 cup of pumpkin
  • 2 cups of all purpose flour 
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of ginger
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 1 tablespoon of soda

 Ingredients for the caramel frosting:

  • 3 tablespoons of butter
  • 1/4 cup of heavy cream
  • 1/2 cup of brown sugar
  • 1 cup of confectioners' sugar
  • 1 teaspoon of vanilla extrac



 So, let's get started and make our cookies. Before you start, heat your oven to 350 degrees. In a big bowl put the butter, the brown sugar and the white sugar. Take your spoon or your cake bidder and mix the ingredients together. Then add one egg and pour the vanilla extract. Mix them one more time. Pour the pumpkin into the big bowl and stir with your spoon. It's going to take a dark orange colour.Keep stirring for 2 minutes. Now, take another medium or small size bowl and pour the flour, the soda, the nutmeg, the cloves, the ginger and the cinnamon. If you want put some salt too. Stir the ingredients together and put them in the other big bowl. Mix them again. So, with your spoon, make little circle cookies and put them in your oven, for 10 minutes.
 Now it's time for the frosting: Boil the butter, the heavy cream and the brown sugar. When it's completely cold pour the confectioners' sugar and the vanilla extract. Now stir with the spoon.
          When the cookies are ready, just frost them with the frosting and the cookies are ready to eat! This is just a notice: Before you put your cookies in the oven you can put some chocolate pieces!
